Poseidon's trident represents the godlike power of water, and the powerful personalities of Aquarians. The central prong is missing to make the symbolism less masculine as this is a more gender-balanced sign - think "age of Aquarius". Aquarians don't think the same way as other people, they are lateral, creative thinkers and the almost alien intelligence of the octopus is used here to represent that.
